As a follow-up to last week’s ice cream post, I decided to use the delicious Double Oreo Ice Cream in my freezer to make cute Oreo ice cream sandwiches! Actually it was my husband’s idea to make the sandwiches using the oreo cookies. They are cute and simple and would be a great party snack! Good portion control as well (that is if you can eat only one).
In my previous post, I mentioned that I was approached by Kitchen PLAY to develop a recipe for an Oreo-themed Halloween recipe event. Oreos are a great addition to ice cream so I agreed to participate. Double Oreo Ice Cream was born. Plus there is a benefit to my readers!

Double Oreo Ice Cream Sandwiches
Make as many ice cream sandwiches as you would like. The ice cream recipe makes enough ice cream to prepare sandwiches using a whole pack of Oreos. Prepare ahead of time and freeze sandwiches; pull out of the freezer just before serving.
Prepare Double Oreo Ice Cream. Once ice cream is fully set, remove from freezer. Twist open and separate as many Oreo cookies as you will need. Use a butter knife to remove cream filling from cookies and eat (we wouldn’t want the cream to go waste, would we?) or throw away (sad). Use a small disher to scoop ice cream onto one half of Oreo cookies. Press ice cream with back of disher to flatten slightly. Top ice cream with remaining cookie halves. Freeze until ready to serve. Enjoy!
