Blueberry Mojito Sorbet Cocktail

My guess? You are reading this post because you were either intrigued by the title or you thought the title sounded strange. A cocktail made into a scoop and then used to make a cocktail. Seems a little backwards. But then ask yourself, what would make your favorite cocktail better? Adding a scoop of something delicious, namely a scoop inspired by that cocktail. Exactly.
My recipe for Blueberry Mojito Sorbet was originally created after tasting a blueberry mojito at a local bar. This is one of my favorite sorbet recipes. In fact it is so good it converted my no-cold-desserts friend to a sorbet lover! Okay enough bragging...but seriously you need to try this sorbet...and then make it into a cocktail! The perfect summer refreshment. Enjoy!
Blueberry Mojito Sorbet Cocktail
Makes 4 cocktails
16 mint leaves
1/2 cup fresh blueberries
4 limes
1 Tablespoon plus 1 teaspoon powdered sugar
Crushed ice
1 cup rum
1 cup club soda
1/2 cup Blueberry Mojito Sorbet
A few springs of mint (for garnish)
Divide mint leaves and blueberries evenly among four Collins glasses. Squeeze juice from one lime into each glass. Add one teaspoon of powdered sugar to each glass. Muddle mint, blueberries, lime juice, and sugar together. Fill each glass about 3/4 full with crushed ice. Add 2 Tablespoons rum to each glass, stir, top with club soda. Float a large spoonful of Blueberry Mojito Sorbet on top of each cocktail (or as much as you'd like). Garnish each glass with a mint sprig, add straw and enjoy!
