Electrolux #splits: Breakfast of Champions

You are probably asking yourself two questions right now: What does that title mean? And why is Lindsay talking about breakfast?

I have chosen to participate in a Foodbuzz Top 9 Takeover fundraising event to support the Ovarian Cancer Research Fund.  Electrolux and Kelly Ripa are hosting this event (hence the title).  For every banana split recipe posted by a Foodbuzz featured publisher, Foodbuzz will donate $50 towards the research fund!  So why not participate?  This is an ice cream blog after all.  You can help raise money too by building your own virtual banana split on Kelly Ripa's website, Kelly Confidential.  Check it out and help support a great cause.

On to the second part of the title - Breakfast of Champions.  I find this phrase is used to represent many things, but usually it is a sarcastic representation of a breakfast that is not so good for you...like beer or dessert.  This week I decided to make a Cereal Ice Cream and pair it with fresh fruit to make the ultimate breakfast banana spilt.  The sweet and robust flavor of the ice cream (along with a little bourbon) will remind you of a spoonful of cereal and milk, and it is the perfect accompaniment to crunchy cornflakes, fresh blueberries and bananas.  Top it with a cherry and you have makings of a Breakfast of Champions!  Or lunch or dinner, who cares?  Throw caution to the wind and enjoy this ice cream any time of day.  I would eat this everyday, if I could get away with it!  Enjoy!

Cereal Ice Cream

This ice cream has enough flavor to stand alone, but topping it with crunchy breakfast cereal and fresh fruit adds even more flavor and another (healthy) level to the breakfast experience. Makes about 3 cups.

2 cups whole milk
1 1/2 cups heavy cream
2/3 cup (133 g) sugar
1/8 cup corn syrup
Big pinch of salt
2 cups cornflakes (or other breakfast cereal of your choice)
1/2 teaspoon ground cinnamon
1/4 cup bourbon

Combine milk, cream, sugar, corn syrup, and salt in a medium saucepan.  Place over medium heat and bring to a low boil.  Remove from heat, add cornflakes and cinnamon, cover and let steep at room temperature for one hour.

Meanwhile, place bourbon in a small saucepan and bring to a boil.  Simmer until the liquid is reduced to half its volume (2 Tablespoons).  Watch the liquid closely because it will only take 2-3 minutes to reduce. Remove from heat, transfer to a small container and set aside to cool.

Once cornflakes have finished steeping, pour mixture through a seive into a medium bowl.  Discard mushy cornflakes.  Stir in reduced bourbon. Chill the mixture thoroughly (at least 4 hours or overnight). Once chilled, pour into an ice cream maker and freeze according to the manufacturer’s instructions.  Place plastic or parchment over ice cream (to prevent ice crystals) and freeze until firm, at least 4 hours.

To make a Breakfast of Champions Split:

Slice one banana in half length-wise and place in the bottom of a sundae dish.  Top with two scoops of Cereal Ice Cream.  Sprinkle with cornflakes and fresh or frozen blueberries (or a berry of your choice).  Top with a cherry.  Devour.

I love this idea! Sometimes I eat cereal for dessert, so it's intriguing to consider an ice cream made with cereal-steeped milk. Great recipe, and a great cause.
