Spring is always beautiful in Maryland. I am taking every moment to enjoy the sun and play in my garden, watching eagerly as my vegetables begin to grow. I planted them a few weeks ago and so far so good. I even ate a small salad yesterday with greens from the garden! While waiting for vegetables, I have been going crazy for strawberries over here at the Scoop Adventures household. When all of the seasonal fruits start appearing, I am inspired to eat healthier and use the fruit to its fullest. Last week I made a Vegan Strawberry Sherbet, and this week I decided to use the sherbet in a delicious Vegan Strawberry Peanut Butter Milkshake – pretty much peanut butter and jelly in a glass. Oh my goodness. Heaven on earth and pretty healthy to boot. Enjoy!
Vegan Strawberry Peanut Butter Milkshake
Makes 2 milkshakes
Heaping 1/2 cup fresh hulled and quartered strawberries
1 1/2 Tablespoons sugar
1 Tablespoon lemon juice
1 frozen banana
1 cup almond milk (or milk or your choice)
4 Tablespoons peanut butter
1 pint (4 scoops) Vegan Strawberry Sherbet
Chill two tall glasses in refrigerator or freezer. Combine strawberries, sugar and lemon juice in a small bowl, stir. Macerate at room temperature for 30 minutes, stirring occasionally. Once macerated, mash strawberries with a fork and set aside. Combine banana, almond milk and peanut butter in a blender and blend until smooth. Remove glasses from fridge and scoop two scoops of strawberry sherbet into each glass. Spoon half of macerated strawberries into each glass. Pour peanut butter milkshake into each glass, divided equally. Add straw and serve immediately.
Don’t want the layered look? Macerate strawberries and then combine all ingredients in a blender, blend until smooth, pour into two glasses and enjoy!
